I used to know how to do this, but I seem to be screwing something up so I’m hoping someone can shed some light on this for me.

I made a wort using 1 U.S. pint of fruit juice concentrate in 1.25 gallons of water, giving me 1.375 gallons of wort.
The specific gravity of this wort was 1.035.

So I've started an Amarone style wine from Argentia Ridge 3 months ago. I just tasted it and... tastes like nondescript red wine, even a little fruity.

Can I tweak the wine even though it's 3 months old? If so, what would you recommend? I'll certainly add tannin and/or chips, but I was thinking of also a mix of either dried raisins/prunes/tart cherries. I don't mind if ...
