Hey Michael - The disciplinare specifies on page 9 that Sui Lieviti must only be Brut Nature or equivalent: "Lo spumante con il riferimento 'sui lieviti' deve essere messo in commercio nella tipologia 'Brut Nature' e relative traduzioni." (Similar language is found on page 7 of the Asolo disciplinare as well.)
