The Vancouver restaurant is giving the season of the tomato a proper send-off with a $154 tasting menu built around Stoney Paradise Farm’s harvest, from gazpacho to heirloom tomato ice cream.

Haisan will take its name from ocean and mountains, joining the landscape Steven Che grew up in with his Chinese heritage. Behind its 16 courses will sit precise calculations and exacting preparation, but none of that will show at the table: the goal there will simply be to feed people properly and make it look effortless.
