I have started using ALDC. Since this should prevent diacetyl being created in the first place, one would think that there is no longer any need for a diacetyl rest.

Does that mean that we no longer bump fermentation temperatures around? Set the fridge at 50f and that's it?

I'm looking to make my own gin...the neutral spirits is no problem...I looking for tried true recipes using maceration method to extract botanicals....I'm also looking for someplace to source the botanicals...besides amazon & ebay ...any help/advice would be greatly appreciated ...thanks

People keep asking me for my coffee wine recipe, so here it is.

This wine needs 4-6 months to mature. Longer is better.
ABV: 12.7-14%

6 oz medium roast ground coffee, by weight. I used Dunkin' Donuts brand, because that's what I like to drink.

Anyone had issues with items advertised as 304 stainless actually being a non food safe grade?

I bought a chiller coil from Klarstein and it started to develop black tarnish in the contact areas between the loops after just 3 uses. From a bit of research that means it’s likely a non food safe stainless grade. Ordered a manganese detection test to confirm it.
