Well I was a little skeptical making a cookie out of a ton of very ripe bananas and lots of seeds, raisins and coconut….but they turned out great! Really good warm too! I subbed flax meal for the 1/4 c flax seed. I added a little cinnamon too! Thanks to Chef Jeff Nowakowski and the National Health Association for this gem of a recipe!
