Most 7 year old's are out of diapers during the day and can normally poop in the toilet and should be pooping in the toilet instead of a diaper.

When your 7 son wakes up with a poopy diaper it could be that he has bowel issues and causing him to poop in his diaper while sleeping.

Or it could be that your 7 year old son is just waking up in the middle of the night and needing to poop and so he just poops in the diaper and goes back to sleep.

If it happens occasionally, then it's usually nothing to worry ...
